CAPTAIN, LEAD SERVER TRAINER
ROCKY BAYE
Born and raised in Syracuse, NY, Rocky is our resident attorney-without-retainer, earning his JD from Syracuse University College of Law in 2012. While typically analytical, Rocky’s service style and technique is quite methodical. That paired with his bright smile, warm hospitality, and world-class charm makes Rocky our company’s best training talent.

RESTAURANT MANAGER
TRACY GOSS
Tracy was born and raised in Rochester NY, and started her hospitality career fifteen years ago. A consummate professional, with an unparalleled eye for service and hospitality, Tracy has graduated through many positions in the Rochester store over her 10 years with us ultimately becoming our General Manager. Tracy has guided our Rochester store to numerous awards and achievements over the years, and really is the backbone of our flagship store. When not analyzing the dining floor, or leading numerous training sessions, Tracy enjoys traveling around watching her sister play soccer. Her sister isn’t your ordinary soccer player, but happens to be arguably the best female soccer player ever, Abby Wambach.

EXECUTIVE CHEF
PHIL ADAMS
Born in Oceanside, California and raised in Rochester, NY, Phil earned his culinary degree in 2007 from the Culinary Institute of America. Since joining the black & blue team in 2009, Phil has climbed the ranks in the kitchen from Line Cook to Sous Chef to Executive Chef. Phil’s passion for both fishing and fish, combined with his love of American-Fusion cuisine is the perfect recipe for exciting, thoughtfully composed dishes. Under Phil’s leadership the Rochester b&b store consistently ranks as the #1 fine dining stalwart in most every media outlet in Rochester.

BUSINESS MANAGER
GLENNIE CLEMENT BURKHART
Glennie grew up in Brighton NY, and graduated from St. Lawrence University. She has been with black and blue for over ten years, something we are very proud of.
Glennie’s entrée into the industry was a weekend job at a local diner at the age of fifteen, where she first began to grow an affinity for food and the restaurant culture. Glennie is gifted with a fantastic personality, so excellence in hospitality comes easy to her, touching so many guests throughout the past decade. When she isn’t working she enjoys spending time with her wheaton terrier, her (new) husband Rob, road trips through Vermont and Maine, and sampling unique foods and craft brews.
